For the past week, I’ve been constantly making beef and chicken recipes, but suddenly, my eyes came across a Green chicken curry, Hariyali Chicken.
My eyes started popping out after seeing this chicken curry made with aromatic herbs like coriander. So, I’ve decided to give it a try. My husband and kids were also excited to try this different chicken curry.
So, on the last day, I endeavored to make the Hariyali Chicken. And this Indian dish was a breeze to make. You don’t need obscure spices, and this beautiful chicken recipe comes out in under 25 minutes.
The result was mind-blowing, and I’ve received many compliments from my family. The creamy, thick, and tangy gravy of Green Chicken (Chicken Hariyali) makes my husband start licking his plate.

The Green Chicken names are different across the globe. This is an Indian Recipe, and in its native region, it’s named Hariyali Chicken. People call it Green Chicken or Green Chicken Masala. in the UK and the USA.
For this recipe, you must first prepare the green herbs paste, consisting of coriander, mint, yogurt, and some other common ingredients.
Unlike the Traditional Chicken Korma or Chicken Dopiaza, we don’t use tomatoes in this curry. That’s why it’s so simple. Green herbs are the only key ingredients that brings the taste and greenish appeal in this curry.
A garlic paste, some traditional ground spices, and onions bring a more pleasant and umami taste.
Ingredients For Green Chicken Curry
Chicken: Most often, boneless chicken is used in this chicken curry. But based on your preference, the bone-in chicken is also best.
Garlic: For aromatics I’m just using garlic and ginger. Make sure to use the paste of these ingredients.
Yogurt: It’s an essential element that brings a creamy and smooth texture.
Onions: Just like the other chicken gravies you still need thinly sliced onions to bring savory taste. White onion is preferable to red onion because it improves the color of gravy.
Ground Spices: You need some basic ground spices for this curry, including red chili powder, turmeric powder, red chili flakes, coriander powder, garam masala, fenugreek powder, black pepper, oregano powder, and cumin powder.
Herbs: For herbs, I’m using some green onions, mint, cilantro leaves, and green chilies.
Oil: You can use any cooking oil to fry the chicken.
Let’s Make This Green Chicken/Hariyali Chicken
- Make The Herbal Paste: The first step is to make the herbal paste (Green Masala). Toss cilantro, chiles, green onions, mint, and yogurt in a blender to get the paste. Set it aside.
- Saute Onions: Heat the oil in a pan or any deep cooking pot, and add the garam masala. In garam masala, I’m using cumin seeds, bay leaf, and cinnamon. And if you don’t have these items, don’t worry, skip this step. Alternatively, you can use garam masala powder in later steps. Now sauté the onions until golden.
- Add Garlic Ginger Paste: Now, infuse the aromatics. Don’t forget to use the mortar & pestle to get the paste. Stir it for 2 minutes.
- Toss The Chicken: Add the chicken to the pan and stir it well to blend aromatics with the chicken. Now, close the lid for 3 minutes. Covering the lid will ensure more juicy and flavorful chicken bites.
- Add Herbal Paste: Then, add the herbal paste and spices. Mix everything well, and don’t leave the kitchen. This step is important; stirring is the key to getting the best gravy. Stir the spatula for 2 minutes, then cover the lid for 15 minutes. During this process, the chicken pieces will get softer and juicier.
- Garnishing: Finally, uncover the lid and check whether the chicken becomes softer. Garnish with dry fenugreek and green chiles if chicken bites are cooked well.
Tips To Make Hariyali Chicken More Savory?

You don’t need to add water to this gravy. Water can dilute the taste of ground spices. Yogurt is already there– a better substitute for water. But if you have a huge family, you can add half a cup of water, and in this case, let the curry simmer for an additional 2 – 3 minutes.

Marinating the chicken is another key secret for getting succulent chicken. But it might take you an extra 15 minutes. So if you’ve run out of time, simply skip this step.

This chicken recipe requires a lot of stirring. So, give it time to blend everything perfectly. Don’t say from your kitchen throne and keep stirring.

The black pepper and garlic ginger paste are great taste makers for this recipe. So don’t skip these ingredients.

You can also add a dash of paprika powder (red Kashmiri spice) for an additional spicy and tangy taste.

I recommend using smaller chicken pieces rather than the larger ones. The smaller chicken chunks cook quickly and become juicer than the large pieces.

Add the lemon juice or vinegar for more citrus and tart taste. I don’t like too much citrus flavor, that’s why I’m skipping these ingredients.

How To Serve Hariyali Chicken
Green Chicken/Hariyali Chicken is served with Roti or Naan. You can also use white rice with this gravy.
Also, serve salads, Rita, or spicy Chutney with Green chicken to make your bites more flavorsome. The traditional Asian salad and Mediterranean Salad work best with this recipe.
You can also use Green Chicken masala in wraps, paratha rolls, or sandwiches.
Hariyali Chicken Recipe | Green Chicken Curry
Ingredients
- 800 g Chicken
- 1.5 bowl Coriander leaves
- ⅓ bowl Mint leaves
- 20 g Green onions
- 1 tsp Garlic cloves
- ½ tsp Ginger cloves
- 2 Green Chiles
- 1 White Onion
- 1 bowl Yogurt
- 1 tsp Red chili powder
- 1 tsp Turmeric powder
- ½ tsp Red chili flakes
- ½ tsp Black pepper
- ½ tsp oregano powder
- 1 tsp Coriander powder
- 1 tsp Dry fenugreek powder
- Salt (adjustable)
- 1 tsp Cumin seeds
- 2 Cinnamon
- 1 Bay leaf
Instructions
- First, blend cilantro, green chiles, green onions, mint, and yogurt in a blender to get the green paste.
- Heat the oil in a pan. Toss cumin seeds, cinnamon, and bay leaves, stir for a minute, and then sauté the onions until they turn light golden.
- Add the garlic and ginger paste and stir for 2 minutes.
- Now add the chicken. Stir and fry for a minute, and then close the lid for 2 minutes.
- Then, add the herbal paste that we make in step 1. Also, add the ground spices, including red chili flakes, red chili powder, turmeric powder, oregano powder, coriander powder, black pepper, and salt. Stir for 2 minutes to infuse spices in gravy. Next, close the lid for 15 minutes.
- Check the juiciness of the chicken. Let the chicken simmer for 3 or 5 minutes if it is not tender.
- Lastly, garnish with dry fenugreek and green chilies. Enjoy! Your green chicken is ready to serve.
