Chicken Paratha Roll is one of the renowned Pakistani and Indian street food items. Stuffed with juicy, succulent chicken bites and garlic sauce, it’s easy to make, and you can prepare it in under 30 minutes.

I grew up in KPK, Pakistan, and this area was not too famous for street foods during my era. Whenever we visited our aunt’s home in Karachi, we encountered dozens of street food carts near my aunt’s home. The item I always buy from there is chicken paratha roll, and till now, it’s my favorite street food. 

After falling into addiction with this recipe, I’ve whipped up this recipe hundreds of times in my home. Paratha Roll is a simple and straightforward recipe. The thing that makes this sider more special is homemade garlic sauce.

You can also try ketchup or mint chutney with it, but the garlic sauce is like a delicacy and has a distinct taste. 

Nonetheless, the chicken bites seasoned with black pepper, mayonnaise, and dairy cream make this recipe appetizing, creamy, yummy, and savory.

  • Easy To Make: This is not a hard, deep-frying recipe. Just boil the chicken for 7 – 10 minutes, season it with mayo garlic flavors, and fill it in the paratha, and you’re good to go. So, if you’re a lazy lady like me, this is a super breeze recipe.

The Magical Sauce

Initially, I was naive and knew nothing about how to improve the taste of paratha roll. But eventually, I got a secret remedy to elevate the flavor of chicken paratha rolls. 

The remedy or a secret is magical garlic sauce that tastes insane. I’ve also tried this sauce in my shawarma roll, and it earns huge compliments from my husbands and kids. You can also use this sauce with chicken pakora, fried chicken, fried fish, and other similar recipes.

This sauce gives a more zesty and aromatic taste, making the paratha roll bites more special. 

Ingredients

Chicken: The breast pieces are the preferable option for this recipe because they are the juicer part of chicken. Simply cut it into smaller pieces. Avoid using bone-in chicken for paratha rolls. 

Dough: To prepare dough, you need all-purpose flour; wheat flour is also the best substitute. Further, you need water, oil, salt, and a white egg part. 

Sauce Ingredients: To make the garlic sauce, you need some garlic chunks, lemon juice, egg white part, oil, salt, and vinegar. I’m sure all these ingredients are available in your kitchen. 

Chicken Seasoning: For chicken seasoning, you need chopped onions, black pepper, cream, mayonnaise, salt, green chilies, and cilantro. Instead of chopped onions, you can also mix onion and garlic powder. 

Wraps sheet: Without this plastic sheet, it’s an uphill task to maintain the rolled shape of paratha rolls. 

Instructions:

  1. Prepare the Dough: I’ll start by making the dough. Take a mixing bowl and add flour to it. Add some water, oil, salt, and white egg to the mixture and mix it well. This is a time taken to process, so give it your best to get a subtle dough. Plus, don’t forget to add water to make it smoother. Knead until you get a soft and smoother dough. Set it aside for a few minutes.

I’ve divided dough into three balls
  1. Boiling Chicken: Now boil the chicken in water, and add some salt for taste. Boil it until the chicken gets softer. It could take you around 10 to 15 minutes.

  1. Chicken Seasoning: Now, let’s infuse the taste in chicken chunks. Again, take a mixing bowl, add the boiled chicken, and toss chopped onions, mayonnaise, dairy cream, black pepper, salt, green chilies, and cilantro. The black pepper is the ethereal ingredient that adds an earthy taste to chicken.

  1. Make Garlic Sauce I’m a big fan of this garlic sauce, which you can use with any slider or appetizer. To make it, simply toss garlic, vinegar, egg (only the white part), salt, and lemon juice in a blender and blend all this stuff.

Note:
You can also use this sauce with chapli kababs, and shami kababs, and Aloo samosa.
  1. Roll The Dough:Making paratha and roti is like clockwork, so do this here. Grab a rolling pin and roll the dough. Make sure to make small and round roti(bread). Don’t make the bread too thin; it might be torn off while rolling

  1. Make Parathas: Now heat the ghee on a griddle (tawa), and make the parathas. Ensure not to overly cook because they will get crispy and rip off while rolling.

  1. Assembling: First, add a thin layer of garlic sauce over the paratha, then add the chicken pieces in a row. Make sure to keep the fillings in the middle. Now, Simply roll the paratha and wrap it in plastic wrap/foil. Your garlic chicken paratha roll is ready. Serve it with garlic sauce, chutney, or ketchup.

Tips For Making Chicken Paratha Special 

  • Whole wheat flour is better for making paratha than any other type of flour. In Pakistan or India, this wheat is known as ‘Maida.’ 
  • You can use hot chili sauce instead of dairy cream to make it spicy. Also, use the paprika and spicy tomato ketchup as a seasoning for chicken bites. 
  • Always use plastic wraps/foils to prevent rolls from being open.
  • Don’t spread too much garlic sauce or ketchup over the paratha; otherwise, it might break while rolling. You can dip the paratha roll in these sauces after wrapping it in the plastic foil.

Variations:

  • You can have many vegetables in a paratha roll if you’re a vegan. Finely chopped capsicum, onions, carrots, and cabbage are the best options in a paratha roll. But make sure to first stir fry all these vegetable in a pan. I prefer butter over oil; add some soy sauce and black pepper to taste. 
  • Instead of chicken, you can also use ground beef (keema) or juicy beef chunks. 
  • If you want to save money, add boiled potatoes, garlic sauce, and other vegetables. Potatoes pair perfectly well with ketchup and garlic sauce. 
  • Cheese is another best variation to make paratha roll more umami. But for this, you need to heat the paratha roll in the oven to meet the cheese.

How To Serve Chicken Paratha Roll?

Paratha rolls are street food; we often serve them with sauces and ketchup. But you can serve fries with it. 

Chicken paratha rolls can be used as a side dish with any main dish like chicken korma or chicken karahi, or it’s the best option to serve with chana pulao. 

You must catch a soft drink or a bottle of coca cola with it because the mayo-garlic flavor will thrill your palates.

Ingredients
  

  • 400 g boneless chicken
  • cup chopped onions 
  • 1.5 tbsp mayonnaise 
  • 1.5 tbsp dairy cream
  • 1 – 1.5 tbsp black pepper
  • Salt
  • bowl cilantro
  • green chilies 

Garlic Sauce:

  • 4-5 garlic chunks
  • 1 tbsp lemon juice
  • ½ tbsp vinegar
  • 1/3 tbsp cooking oil
  • Salt

For Making Dough: 

  • 1.5 cups all purpose flour
  • 1 egg (only white part)
  • 1 tbsp oil
  • water
  • salt
  • 2 – 3 tbsp Ghee/oil for frying paratha

Instructions
 

  • Prepare the Dough: First, add flour, egg (white part), oil, and salt to a mixing bowl and mix it well. Add water and knead it until you get a subtle, smooth dough. Keep adding water for smooth content. 
  • Boil The Chicken Pieces: Boil chicken in salted water until tender, about 10-15 minutes. Then, in a mixing bowl, mix boiled chicken with onions, mayonnaise, cream, black pepper, salt, green chilies, and cilantro for flavor.
  • Adding Taste To Chicken: Infuse flavor into chicken chunks by mixing boiled chicken with onions, mayonnaise, cream, black pepper, salt, green chilies, and cilantro. Black pepper adds an earthy taste.
  • Prepare Garlic Sauce: To make garlic sauce, blend vinegar, egg white, salt, and lemon juice. 
  • Make Paratha: Roll the dough with a rolling pin into small, round rotis, ensuring they're not too thin to prevent tearing. Heat ghee on a griddle (tawa) and cook the parathas, being careful not to overcook to prevent them from becoming too crispy and tearing while rolling.
  • Assembling: Spread a thin layer of garlic sauce on the paratha, then line up the chicken pieces in the center. Roll the paratha tightly and wrap it in plastic wrap or foil. Serve your garlic chicken paratha roll with garlic sauce, chutney, or ketchup.
