First, blend cilantro, green chiles, green onions, mint, and yogurt in a blender to get the green paste.
Heat the oil in a pan. Toss cumin seeds, cinnamon, and bay leaves, stir for a minute, and then sauté the onions until they turn light golden.
Add the garlic and ginger paste and stir for 2 minutes.
Now add the chicken. Stir and fry for a minute, and then close the lid for 2 minutes.
Then, add the herbal paste that we make in step 1. Also, add the ground spices, including red chili flakes, red chili powder, turmeric powder, oregano powder, coriander powder, black pepper, and salt. Stir for 2 minutes to infuse spices in gravy. Next, close the lid for 15 minutes.
Check the juiciness of the chicken. Let the chicken simmer for 3 or 5 minutes if it is not tender.
Lastly, garnish with dry fenugreek and green chilies. Enjoy! Your green chicken is ready to serve.
