You know, guys, there are so many chicken recipes out there, even on this blog, but today’s delight will be top-notch and my favorite. The juicy and tender chicken bites pair perfectly with soft french fries and a layer of cheese, making it even more appetizing. 

Yesterday, my kids made so many requests to make chicken loaded french fries, and I prostrated in front of their burning desire. 

I’m also a true fan of this recipe because it tastes so satisfying, and it’s the best item to serve in the evening family reunion with a cup of tea. This one is not like any main dish; it’s more like an evening snack or cafe appetizer. But yeah! The true flavors of golden juicy chicken and the softness of fries always tantalize the taste buds.

This recipe can be made with an oven, but I’m trying it without oven to save time and extra effort.

I will eliminate the misconception that many chefs are embedded in your minds regarding chicken loaded fries. This chicken fries recipe is not a difficult at all. 

I agree this recipe requires extra pots and dishes because it is not a dump-and-go recipe like Chicken Karahi or Chicken Bhuna. But the process of making this dish is straightforward and a breeze. 

There is no need for hard-to-find spices, no oven, or no secret ingredient. 

You need just basic ground spices that you regularly use in your curries, chilli sauce or ketchup, and mozzarella cheese, and that’s it. Also, this recipe demands your time, so give it your full attention, and you will get surprising results. 

The process of crafting this dish might differ on the internet; some chefs include extra steps, and some keep it simple like mine. But in a nutshell, you don’t need to fret or hesitate while preparing chicken-loaded fries, this one is an easier culinary delight.

Ingredients: 

  • Chicken: The smaller the chicken pieces, the more tender they will be. For this recipe, you must use boneless chicken, I prefer the chicken breast. You have to put your whole heart into making those dainty chicken pieces. 
  • Potatoes: To get the best french fries, you need to cut them very carefully. Neither too big nor too small; just use medium-sized slices of potatoes. I sliced potatoes with a knife because it gave me more freedom to get the desirable slice size. 
  • Capsicum & Carrots: I know chicken-loaded fries are not a vegan recipe, but you have to infuse them with a touch of vegan flair, and for this, I used capsicum and carrots. 
  • Lemon: I’ll squeeze some lemon juice on the chicken pieces to make them tart. 
  • Garlic Ginger Paste: For a milder flavor, I’m using one tablespoon of garlic ginger paste. 
  • Sauces: I’m using chili sauce and ketchup to give the chicken reddish hues. These ingredients will also elevate the chicken’s flavors and make it more tangy and umami. 
  • Spice: There is not a huge list of spices for seasoning, but still, you need paprika red chili (Kashmiri red spice), black pepper, red chili powder, dry coriander powder, cumin seeds, and store-bought crispy fry powder (you can skip this one or use bread crumbles). 
  • Oil: You also need cooking oil for marination and to fry chicken and potatoes. 
  • Mozzarella cheese: I love mozzarella more than any other cheese on the planet. It melts too quickly and has a mild flavor that instantly infuses the chicken pieces. But feel free to use cheddar cheese.

Let’s Make The Chicken Loaded Fries:

  1. Marinate The Chicken: The first step is to marinate the chicken. Grab a mixing bowl and add the chicken pieces, then add salt, red chili powder, paprika powder, dry coriander, and store-bought crispy fry masala. I’m also adding a splash of cooking for better mixing; do not mix the masala and leave it for 15 minutes. Don’t cover the bowl because the chicken will leave the moisture and lose its juice.

  1. Cut Potatoes: Now peel the potatoes and cut them into medium-sized slices. You can soak potatoes in salty water for 10 minutes for a saltier flavor, but I skipped this step to save time.

  1. Fry Potatoes: Next, heat the oil in a pan and fry the potatoes on a medium flame. Be careful while frying; don’t overcook them. Keep flipping the potatoes during the frying process to get crispy slices. Once done, transfer the the sweet potato fries to a pot to keep them warm and delicious.  
  1. Fry The Chicken: Reduce the oil from the pan and fry the chicken pieces. I’m using 1/3 cup of oil for frying. Keep the flame medium. After 4 – 5 minutes, add the garlic and ginger paste and sprinkle black pepper; at this stage, a pleasant aroma will make you drool. After the next 2 minutes, squeeze the lemon, add ketchup and chili sauce, and also include the capsicum and carrot slices. Fry for more than 3 – 4 minutes.

  1. Layering: Now, our chicken is ready to lay on the fire. Grab a new pan (or a similar one), add fried potatoes, and then gently spread the chicken bites on the fries.

  1. Top With Cheese: Lastly, you have to sprinkle the mozzarella cheese on top. I did it with the cheese grater, but if you don’t have this tool, you can simply use the knife.

  1. Steaming: As I’ve told you earlier, I will craft a chicken-loaded fries recipe without an oven. The purpose of the oven is to melt the cheese, and you can also do the same thing with steaming (Dam). Close the pan lid and put it on the grill (tava). Keep the flame low and steam it for 10 minutes to melt the cheese.

  • When it comes to loaded chicken fries, there are so many things that you can do to make the recipe stand out. Firstly, you should focus on improving the taste of fries; for this purpose, you can soak fries in salty water for 15 minutes or marinate fries with gram flour. 
  • If you want crispy and juicy chicken pieces, you should marinate them with any crispy sarap breading (powder). Alternatively, if it’s not at your disposal in the kitchen, use the bread crumbles in it. 
  • People often ignore the garlic and ginger paste, but you must use them for a more savory and robust taste. Both these ingredients will also make your recipe more aromatic and flavorful.

FAQs

For a more tangy and zesty experience, amp up the amount of paprika chili and red chili powder in chicken marination. The high amount of chili sauce can also add a more tangy flavor to the recipe. 

I really like the garlic flavor in the fires, so I mixed the fries with garlic sauce prior to frying. If you don’t have this sauce, simply mix the gram flour and ginger garlic paste in the fires to get the mild flavor of garlic. 

Yes, you can store the chicken-loaded fries in your fridge. Upon reusing them, just heat them in the microwave or oven. However, I don’t recommend storing this recipe in your fridge for more than one day. 

What To Serve With Chicken Loaded Fries: 

The chicken-loaded fries are far from your main dish category; they’re mostly served as a side dish. That’s why you don’t need to worry about serving an abundance of accompanying items with them. 

I prefer chai (tea) or some soft drinks with it. You can also savor this culinary experience with chapati, just like I did last time. But essentially, one thing that you must serve with it is the mint chutney or salad.

  • 0.4 kg Chicken (boneless)
  • 3 Potatoes

Instructions
 

  • Let's kick things off by marinating our chicken. Toss those chicken pieces into a bowl, and add a pinch of salt, red chili powder, paprika, dry coriander, and some store-bought crispy fry masala. To enhance the mix, splash in a bit of cooking oil. Give it a good stir, and leave it for 15 minutes—no lid; we want that juiciness.
  • Peel and slice the potatoes. I skipped the salty water soak, but you can do it for an extra salty kick.
  • Heat oil in a pan and fry the potato slices on medium heat. Be careful not to overdo it; flip them around for the perfect crispiness. Once done, transfer them to a pot to keep things warm and delicious.
  • Time to fry the marinated chicken. Reduce the oil in the pan, keep the flame medium, and toss in the chicken. After a few minutes, add garlic and ginger paste, sprinkle black pepper, and let that aroma fill your kitchen. Squeeze in some lemon, add ketchup, chili sauce, capsicum, and carrot slices. Fry for an extra 3-4 minutes.
  • Now, let's layer it up. Grab a pan, lay down those crispy potato fries, and gently spread the flavorful chicken bites on top.
  • For the crowning touch, sprinkle mozzarella cheese. I used a grater, but a knife works fine if you don't have one.
  • No oven? No problem. Let's steam it. Close the lid, place it on a griddle on low flame, and let it steam for 10 minutes until that cheese melts to perfection. Enjoy your homemade chicken-loaded fries!
