And my family can’t live without it whenever we are out for a picnic. This salad feels more soothing with fried chicken and chicken curries. Even though there are many potato salads, we are purely die-hearted fans of this classical southern potato salad because of its balanced flavours.
This classical potato salad is so much easier to make, and you can whip it up in less than 25 minutes. The boiled eggs and potatoes are good energy sources, making this salad more healthy and nutritious.

Ingredients
- Potatoes: You can use any type of potatoes for this recipe. I’m a fan of Russet and Yukon gold potatoes.
- Hard-Boiled Eggs: Eggs are a must-have for this recipe. And you have to boil the eggs before crafting this salad.
- Dressing: The dressing for this potato salad is straightforward: you’ll need mayonnaise, mustard paste, sugar, and dill pickles. However, I’m using mixed pickle relish for now, as there are no dill pickles in my fridge:(
- Other: Further, add black pepper, garlic powder, salt, sugar, and vinegar for extra taste.
How To Make:
- Boiling: Boil the eggs and potatoes in two distinct pots. Make sure to dice the potatoes in small pieces. Add a pinch of salt to get a perfect salty taste of potatoes. In my case, it took me around 13 minutes to boil potatoes. The time might vary depending on your stove flame and the type of potatoes.
- Prepare Dressing: Take a mixing bowl and prepare the dressing. Add the mayonnaise, mustard paste, vinegar, pickle relish, green onion and spices in a bowl and whisk them together.
- Pour Dressing: Now combine the potatoes and hard-boiled egg in one bowl and pour the dressing over them. Gently mix the salad. You can sprinkle the dash of paprika for texture and fiery taste. Refrigerate for 20 minutes and enjoy.

- I prefer preparing this Southern potato salad a day in advance because it tastes even better after 24 hours, allowing the flavours to meld perfectly.
- You can also garnish with red chilli flakes instead of paprika. But make sure to sprinkle a small amount of spices.

- I’ve seen many of my fellows blend a few tablespoons of Greek yoghurt in this potato salad to make it more creamy and savoury.

Ingredients
- 2 Potatoes
- 2 Eggs
- 1 tbsp mayonnaise
- 1 tbsp yellow mustard
- 2 tbsp white vinegar
- ½ tbsp black pepper
- 1 tbsp sugar
- ½ tbsp garlic powder
- ½ cup pickle relish
- Salt (adjustable)
Instructions
- Boil Eggs and Potatoes: Start by boiling the eggs and potatoes in separate pots. Chop the potatoes into small pieces and add a pinch of salt to the water for extra flavour. Boil the potatoes for about 13 minutes until they're tender. The exact time may vary depending on your stove and the type of potatoes you're using.
- Make the Dressing: Combine mayonnaise, mustard, vinegar, pickle relish, chopped green onions, and your favourite spices in a mixing bowl. Whisk everything together until it's well mixed.
- Mix and Chill: Combine the boiled potatoes and peeled eggs in a large bowl. Pour the dressing over them and gently mix everything. For an extra kick, sprinkle some paprika on top. Chill the salad in the refrigerator for about 20 minutes before serving. Enjoy your delicious potato salad!
