Ingredients

  • 2 Potatoes
  • 2 Eggs
  • 1 tbsp mayonnaise
  • 1 tbsp yellow mustard
  • 2 tbsp white vinegar
  • ½ tbsp black pepper
  • 1 tbsp sugar
  • ½ tbsp garlic powder
  • ½ cup pickle relish
  • Salt (adjustable)

Instructions

  • Boil Eggs and Potatoes: Start by boiling the eggs and potatoes in separate pots. Chop the potatoes into small pieces and add a pinch of salt to the water for extra flavour. Boil the potatoes for about 13 minutes until they're tender. The exact time may vary depending on your stove and the type of potatoes you're using.
  • Make the Dressing: Combine mayonnaise, mustard, vinegar, pickle relish, chopped green onions, and your favourite spices in a mixing bowl. Whisk everything together until it's well mixed.
  • Mix and Chill: Combine the boiled potatoes and peeled eggs in a large bowl. Pour the dressing over them and gently mix everything. For an extra kick, sprinkle some paprika on top. Chill the salad in the refrigerator for about 20 minutes before serving. Enjoy your delicious potato salad!
