Ingredients
  

  • 1 tablespoon olive oil
  • 1 medium onion diced
  • 2 cloves garlic minced
  • 2 medium carrots sliced
  • 2 celery stalks sliced
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon salt adjust to taste
  • 6 cups chicken or turkey broth
  • 1 cup cooked wild rice
  • 2 cups cooked turkey shredded or cubed
  • 1 cup heavy cream or half-and-half for a lighter version
  • 2 tablespoons all-purpose flour optional, for thickening
  • Fresh parsley chopped, for garnish

Instructions
 

  • Sauté onion, garlic, carrots, and celery in olive oil.
  • Add thyme, rosemary, salt, and pepper, cooking until fragrant.
  • Pour in broth and simmer for 10-15 minutes.
  • Stir in wild rice and turkey; simmer for 5 minutes.
  • Thicken with flour slurry (optional) and stir in cream.
  • Garnish with parsley and serve hot.
