Ingredients
  

  • 2 cups fresh strawberries or frozen, thawed
  • 1/2 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream
  • 1 tablespoon powdered sugar
  • Fresh strawberries and mint leaves for garnish

Instructions
 

  • Wash and hull the fresh strawberries. If using frozen strawberries, thaw and drain them.
  • Place the strawberries, granulated sugar, and lemon juice in a blender. Blend until smooth.
  • Pour the strawberry puree through a fine mesh sieve to remove seeds.
  • In a bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
  • Gently fold the strawberry puree into the whipped cream using a spatula.
  • Spoon the mousse into dessert glasses or ramekins, smoothing the tops.
  • Refrigerate for at least 2 hours to set the mousse.
  • Garnish with fresh strawberries and mint leaves before serving.
