2 cups fresh strawberries or frozen, thawed 1/2 cup granulated sugar 1 tablespoon lemon juice 1 teaspoon vanilla extract 1 cup heavy whipping cream 1 tablespoon powdered sugar Fresh strawberries and mint leaves for garnish
Wash and hull the fresh strawberries. If using frozen strawberries, thaw and drain them.
Place the strawberries, granulated sugar, and lemon juice in a blender. Blend until smooth.
Pour the strawberry puree through a fine mesh sieve to remove seeds.
In a bowl, beat heavy whipping cream, powdered sugar, and vanilla extract until stiff peaks form.
Gently fold the strawberry puree into the whipped cream using a spatula.
Spoon the mousse into dessert glasses or ramekins, smoothing the tops.
Refrigerate for at least 2 hours to set the mousse.
