Whisk together soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil in a medium bowl.
Place chicken thighs in the slow cooker and pour the sauce over them, ensuring even coating.

Remove the chicken from the slow cooker and set it aside.
