Ingredients
  

  • Chicken: 2 pounds boneless skinless chicken thighs or breasts
  • Soy Sauce: ½ cup low-sodium soy sauce
  • Honey or Brown Sugar: ⅓ cup
  • Garlic: 3 cloves minced
  • Ginger: 1 tablespoon freshly grated or ½ teaspoon ground ginger
  • Rice Vinegar: 2 tablespoons
  • Sesame Oil: 1 tablespoon
  • Cornstarch: 2 tablespoons mixed with 2 tablespoons water for thickening
  • Sesame Seeds: 1 tablespoon for garnish
  • Green Onions: 2–3 stalks sliced for garnish

Instructions
 

  • Whisk together soy sauce, honey, minced garlic, grated ginger, rice vinegar, and sesame oil in a medium bowl.
  • Place chicken thighs in the slow cooker and pour the sauce over them, ensuring even coating.
  • Cover and cook on low for 6–7 hours or on high for 3–4 hours until the chicken is tender.
  • Remove the chicken from the slow cooker and set it aside.
  • Stir a cornstarch slurry into the sauce in the slow cooker, turn to high, and cook for 10–15 minutes until the sauce thickens.
  • Shred the chicken into bite-sized pieces with two forks and return it to the slow cooker.
  • Stir the chicken into the thickened sauce until well-coated.
  • Serve over rice or noodles, garnished with sesame seeds and sliced green onions.
