Ingredients
  

  • For the Quesadillas:
  • 2 cups rotisserie chicken shredded
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 4 large flour tortillas
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon butter for cooking
  • Optional Add-Ins:
  • 1/2 cup sautéed bell peppers and onions
  • 1/4 cup sliced jalapeños
  • 1/2 cup black beans drained
  • 1/2 cup corn
  • For Serving:
  • Salsa
  • Guacamole
  • Sour cream
  • Fresh cilantro and lime wedges

Instructions
 

  • Prepare the Filling – In a bowl, mix shredded rotisserie chicken with garlic powder, chili powder, cumin, smoked paprika, salt, and black pepper. If using, sauté bell peppers and onions until soft.
  • Assemble the Quesadillas – Lay a flour tortilla flat and sprinkle cheddar and Monterey Jack cheese on one side. Add seasoned chicken and any additional toppings. Top with more cheese and fold the tortilla in half.
  • Cook the Quesadillas – Heat a large skillet over medium heat and melt 1/2 tablespoon butter. Cook each quesadilla for 2-3 minutes per side until golden brown and crispy. Repeat with remaining tortillas.
  • Slice & Serve – Cut into triangles and serve warm with salsa, guacamole, sour cream, and lime wedges.
