Ingredients
  

For the Salmon:

  • 4 salmon fillets 6 oz each, skin-on or skinless
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • Salt and black pepper to taste

For the Pesto:

  • 2 cups fresh basil leaves
  • 1/4 cup pine nuts or walnuts as a substitute
  • 2 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup olive oil
  • Salt and pepper to taste
  • Juice of 1/2 lemon

For Garnish:

  • Lemon wedges
  • Fresh basil leaves

Instructions
 

  • Make Pesto: Blend basil, pine nuts, garlic, Parmesan, olive oil, and lemon juice in a food processor.
  • Season Salmon: Brush fillets with olive oil and season with garlic powder, paprika, salt, and pepper.
  • Grill Salmon: Preheat the grill to medium-high heat, oil the grates, and grill salmon for 4-5 minutes per side.
  • Top with Pesto: Remove salmon from the grill and immediately top with fresh pesto.
  • Garnish and Serve: Plate with fresh basil and lemon wedges.
