  • 8 oz wide rice noodles gluten-free
  • 2 tablespoons gluten-free soy sauce or tamari
  • 2 tablespoons dark soy sauce gluten-free
  • 1 tablespoon oyster sauce gluten-free
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 2 tablespoons vegetable oil
  • 1 clove garlic minced
  • 8 oz chicken breast or thigh thinly sliced
  • 1 cup Chinese broccoli cut into bite-sized pieces (or substitute with regular broccoli or broccolini)
  • 2 large eggs lightly beaten
  • Optional garnish: Fresh lime wedges sesame seeds, or chopped cilantro

Instructions
 

  • Cook rice noodles until tender, drain, and set aside.
  • Mix gluten-free soy sauce, dark soy sauce, oyster sauce, fish sauce, and sugar in a bowl.
  • Stir-fry chicken in a wok until golden, then set aside.
  • Sauté garlic and broccoli until tender.
  • Push broccoli to one side and scramble the eggs in the same pan.
  • Add noodles, chicken, and sauce; toss to coat and cook for 2-3 minutes.
  • Serve hot, garnished with lime wedges or sesame seeds.
