Ingredients
  

For the Soup:

  • 1 pound boneless skinless chicken breasts
  • 4 cups chicken broth
  • 2 cups marinara sauce use your favorite brand or homemade
  • 1 medium onion finely chopped
  • 3 garlic cloves minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon crushed red pepper flakes optional, for a little heat
  • 1 cup shredded mozzarella cheese
  • ½ cup grated parmesan cheese

For the Toppings:

  • Extra parmesan cheese for serving
  • Fresh basil leaves chopped
  • Croutons or garlic bread optional

Instructions
 

  • Place chicken, onion, garlic, Italian seasoning, and red pepper flakes in the crockpot.
  • Pour chicken broth and marinara sauce over the ingredients. Stir to combine.
  • Cook on low for 6–8 hours or high for 3–4 hours.
  • Remove chicken, shred it, and return it to the pot.
  • Stir in mozzarella and parmesan cheese until melted.
  • Serve hot with parmesan, basil, and garlic bread.
