Ingredients
  

  • 1.5 lbs baby potatoes
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp dried rosemary or thyme
  • 1/2 tsp smoked paprika optional
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • Wash and scrub the baby potatoes. Parboil in salted water for 10 minutes.
  • Drain and place potatoes on a baking sheet lined with parchment paper.
  • Toss with olive oil, garlic powder, rosemary, paprika, salt, and pepper.
  • Roast at 425°F (220°C) for 20-25 minutes, flipping halfway through.
  • Garnish with parsley and serve hot with your favorite dips.
