Ingredients
  

  • 2 Potatoes (cut in wedges)
  • 1 cup of oil for frying potatoes 

For Chili Oil:

  • 2 Green chilies 
  • 1 tsp Garlic paste or minced garlic 
  • 1 tsp Coriander powder
  • 1/2 bowl cilantro 
  • 1 tsp Lemon juice
  • 2 tsp Hot oil
  • 1 tsp Red chili flakes (adjustable)
  • Salt (adjustable)

Instructions
 

  • First, cut the potatoes into slightly thick wedges. Rinse the potatoes with salty water to add a subtle saltiness to them as they cook. 
  • Heat the oil in the pan and fry the potatoes until they turn slightly golden. Keep the flame medium during this process. 
  • Transfer the potatoes to a paper towel-lined plate to drain excess oil.
  • Combine all the spices in a mixing bowl. Drizzle the heated oil over the spices and add the potato wedges. Mix everything well, allowing the spices to coat the potatoes evenly.
