3 large bell peppers red, yellow, or green, halved and seeds removed 1 cup cherry tomatoes halved 1 cup fresh mozzarella balls or shredded mozzarella 1/4 cup fresh basil leaves chopped 1 tablespoon olive oil 1 teaspoon balsamic glaze plus extra for drizzling 1/2 teaspoon salt 1/4 teaspoon black pepper 1/2 teaspoon Italian seasoning 1 clove garlic minced (optional)
Preheat your oven to 375°F (190°C).
Line a baking sheet with parchment paper.
Slice the bell peppers in half lengthwise and remove the seeds.
Brush them lightly with olive oil and sprinkle with salt, pepper, and Italian seasoning.
In a mixing bowl, combine the cherry tomatoes, mozzarella, fresh basil, minced garlic (if using), and balsamic glaze.
Toss the mixture gently, then spoon it into the bell pepper halves, distributing evenly.
Place the stuffed peppers on the prepared baking sheet.
