Ingredients
  

  • 3 large bell peppers red, yellow, or green, halved and seeds removed
  • 1 cup cherry tomatoes halved
  • 1 cup fresh mozzarella balls or shredded mozzarella
  • 1/4 cup fresh basil leaves chopped
  • 1 tablespoon olive oil
  • 1 teaspoon balsamic glaze plus extra for drizzling
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon Italian seasoning
  • 1 clove garlic minced (optional)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Line a baking sheet with parchment paper.
  • Slice the bell peppers in half lengthwise and remove the seeds.
  • Brush them lightly with olive oil and sprinkle with salt, pepper, and Italian seasoning.
  • In a mixing bowl, combine the cherry tomatoes, mozzarella, fresh basil, minced garlic (if using), and balsamic glaze.
  • Toss the mixture gently, then spoon it into the bell pepper halves, distributing evenly.
  • Place the stuffed peppers on the prepared baking sheet.
  • Bake for 18-20 minutes, or until the bell peppers are slightly tender and the mozzarella is melted and bubbly.
  • Remove from the oven and let them cool for a few minutes.
  • Drizzle with extra balsamic glaze and garnish with additional fresh basil before serving.
