2 large sweet potatoes spiralized into noodles, or use pre-packaged sweet potato noodles 1 tablespoon olive oil for sautéing 1/2 cup raw cashews soaked in water for at least 20 minutes 1 cup unsweetened almond milk or any milk of your choice 1 tablespoon nutritional yeast for a cheesy flavor 2 cloves garlic minced 1 tablespoon lemon juice 1 teaspoon dried thyme or 1 tablespoon fresh thyme Salt and pepper to taste Fresh parsley for garnish Optional: 1/2 cup spinach or kale for added greens
Spiralize the sweet potatoes into noodles (or use pre-made noodles). Sauté in olive oil for 5-7 minutes until tender.
