Ingredients
  

For the Muffins:

  • 1 ¾ cups 220g all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup 120ml vegetable oil or melted butter
  • ¾ cup 150g granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup 120ml buttermilk or whole milk
  • 1 cup 150g fresh strawberries, diced

For the Cream Cheese Filling:

  • 4 oz 113g cream cheese, softened
  • 3 tablespoons powdered sugar
  • ½ teaspoon vanilla extract

Instructions
 

  • Preheat the oven to 375°F (190°C). Line a muffin tin with paper liners.
  • Prepare the cream cheese filling by mixing cream cheese, powdered sugar, and vanilla.
  • Mix the dry ingredients in one bowl and the wet ingredients in another. Combine gently.
  • Fold in diced strawberries.
  • Fill muffin cups halfway, add cream cheese filling, and cover with more batter.
  • Bake for 18-22 minutes until golden. Cool and serve.
