Ingredients
  

  • 1 cup fresh strawberries washed and hulled
  • 8 oz cream cheese softened
  • 1/2 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 cup graham cracker crumbs plus more for coating, if desired
  • 1 cup white chocolate chips
  • 1 tbsp coconut oil optional

Instructions
 

  • Blend strawberries into a puree. Mix with cream cheese, powdered sugar, and vanilla extract until smooth.
  • Fold in graham cracker crumbs until the mixture forms a dough. Chill for 30 minutes.
  • Scoop and roll into truffle-sized balls. Freeze for 20-30 minutes.
  • Melt white chocolate chips in the microwave, adding coconut oil for a smoother texture if needed.
  • Dip truffles in the melted chocolate and place on a parchment-lined tray. Optionally, roll in graham cracker crumbs.
  • Garnish with extra crumbs or a chocolate drizzle. Refrigerate until set.
  • Serve chilled and enjoy!
