Strawberry Cheesecake Truffles

1 cup fresh strawberries washed and hulled 8 oz cream cheese softened 1/2 cup powdered sugar 1 tsp vanilla extract 1 cup graham cracker crumbs plus more for coating, if desired 1 cup white chocolate chips 1 tbsp coconut oil optional
Blend strawberries into a puree. Mix with cream cheese, powdered sugar, and vanilla extract until smooth.
Fold in graham cracker crumbs until the mixture forms a dough. Chill for 30 minutes.
Scoop and roll into truffle-sized balls. Freeze for 20-30 minutes.
Melt white chocolate chips in the microwave, adding coconut oil for a smoother texture if needed.
Dip truffles in the melted chocolate and place on a parchment-lined tray. Optionally, roll in graham cracker crumbs.
Garnish with extra crumbs or a chocolate drizzle. Refrigerate until set.
