Pat the cod fillets dry with paper towels to remove excess moisture. Drizzle the fillets with olive oil, ensuring each fillet is evenly coated.

Dredge each cod fillet into the parmesan mixture, pressing gently so the crust adheres evenly to the fish. Make sure both sides of the fish are fully coated.
