Ingredients
  

  • 4 cod fillets about 6 ounces each
  • 1 cup parmesan cheese grated
  • 1/2 cup almond flour or breadcrumbs if preferred
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/2 teaspoon cayenne pepper adjust to your heat preference
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon fresh parsley chopped (for garnish)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Lemon wedges for serving

Instructions
 

  • 1️⃣ Prepare the Crust
  • In a shallow dish, combine the grated parmesan cheese, almond flour, garlic powder, paprika, cayenne pepper, salt, and black pepper. Stir well until the mixture is thoroughly blended.
  • 2️⃣ Prep the Cod Fillets
  • Pat the cod fillets dry with paper towels to remove excess moisture. Drizzle the fillets with olive oil, ensuring each fillet is evenly coated.
  • 3️⃣ Coat the Fish
  • Dredge each cod fillet into the parmesan mixture, pressing gently so the crust adheres evenly to the fish. Make sure both sides of the fish are fully coated.
  • 4️⃣ Bake the Cod
  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it with olive oil. Place the coated cod fillets on the baking sheet. Bake for 12-15 minutes or until the fish is cooked through, flaky, and the crust is golden brown and crispy.
  • 5️⃣ Garnish and Serve
  • Remove the fish from the oven and allow it to rest for a few minutes. Drizzle with lemon juice and garnish with chopped fresh parsley. Serve with lemon wedges on the side for extra zest.
