For the Cupcakes: 1 ¼ cups 160g all-purpose flour 1 tablespoon cocoa powder ½ teaspoon baking soda ½ teaspoon baking powder ¼ teaspoon salt ½ cup 115g unsalted butter, softened ¾ cup 150g granulated sugar 1 large egg room temperature 1 teaspoon vanilla extract ½ cup 120ml buttermilk, room temperature 1 teaspoon white vinegar 1 tablespoon red food coloring For the Cream Cheese Frosting: 8 ounces 225g cream cheese, softened ½ cup 115g unsalted butter, softened 3 ½ cups 440g powdered sugar 1 teaspoon vanilla extract
Preheat oven to 350°F (175°C) and line a muffin tin with cupcake liners.
Whisk together flour, cocoa powder, baking soda, baking powder, and salt.
Cream butter and sugar until fluffy. Beat in the egg and vanilla.
Alternate adding dry ingredients and buttermilk mixture to the batter. Stir in food coloring.
Divide batter into liners and bake for 18-20 minutes. Cool completely.
Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla to make frosting.
Frost cupcakes and decorate as desired.
