Ingredients
  

  • For the Grilled Chicken:
  • 2 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • For the Vegetables:
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 red onion sliced
  • 1 cup corn kernels fresh or canned
  • 1 cup black beans drained and rinsed
  • 1 avocado sliced
  • 1 cup cooked rice or quinoa optional
  • For the Toppings:
  • Fresh cilantro chopped
  • Lime wedges
  • Salsa or pico de gallo
  • Sour cream or Greek yogurt optional

Instructions
 

  • In a bowl, mix olive oil, lime juice, chili powder, cumin, paprika, garlic powder, salt, and pepper. Marinate chicken for at least 30 minutes.
  • Slice bell peppers, red onion, and prepare corn and black beans. Slice avocado.
  • Preheat grill to medium-high heat and oil the grates.
  • Grill chicken for 6-7 minutes per side until cooked through. Let rest and slice.
  • Grill vegetables for 4-5 minutes until slightly charred.
  • Assemble the bowl with rice or quinoa, grilled chicken, vegetables, and toppings. Serve and enjoy!
