Ingredients
  

For the cakes:

  • 4 oz 113g semi-sweet chocolate (chopped)
  • 4 oz 113g unsalted butter (plus extra for greasing)
  • 2 large eggs
  • 2 large egg yolks
  • ½ cup 100g granulated sugar
  • ¼ teaspoon salt
  • 1 teaspoon pure vanilla extract
  • cup 40g all-purpose flour

For garnish (optional):

  • Powdered sugar
  • Fresh berries e.g., raspberries or strawberries
  • Vanilla ice cream or whipped cream
  • Fresh mint leaves

Instructions
 

  • Preheat oven to 425°F (220°C) and prepare ramekins by greasing and dusting with flour or cocoa powder.
  • Melt chocolate and butter together; cool slightly.
  • Whisk eggs, egg yolks, sugar, and salt until pale and thick.
  • Combine melted chocolate with the egg mixture, then fold in flour.
  • Divide batter among ramekins and bake for 12–14 minutes.
  • Cool for 1–2 minutes, invert onto plates, and garnish as desired. Serve immediately.
