Ingredients
  

  • For the Taco Meat
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 1 bell pepper chopped
  • 2 –3 cloves garlic minced
  • 2 tablespoons taco seasoning sugar-free
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • For the Casserole Base
  • ½ cup sour cream
  • ½ cup cream cheese softened
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella
  • Optional Toppings
  • Perfect for turning this into a keto taco bowl or healthy taco casserole:
  • Diced tomatoes
  • Jalapeños
  • Avocado or guacamole
  • Black olives
  • Cilantro
  • Salsa
  • Green onions

Instructions
 

  • Cook the Taco Meat
  • Heat olive oil in a skillet.
  • Add ground beef and cook until browned, breaking apart with a spoon.
  • Add onion, garlic, and bell pepper.
  • Cook until softened.
  • Stir in taco seasoning, salt, and pepper.
  • Simmer for 2 minutes to blend the flavors.
  • Prepare the Casserole Layer
  • In a bowl, whisk together sour cream, cream cheese, and eggs.
  • Add half of the cheddar and half of the mozzarella.
  • Mix until creamy.
  • Assemble the Casserole
  • Preheat oven to 350°F (175°C).
  • Grease a baking dish.
  • Spread the cooked taco meat evenly across the bottom.
  • Pour the creamy cheese mixture over the top.
  • Sprinkle the remaining cheese.
  • Bake
  • Bake for 25–30 minutes, until bubbly and golden.
  • Serve
  • Let cool for 5 minutes.
