Ingredients
  

  • For the Meat Sauce
  • 1 lb ground beef
  • 1 tablespoon olive oil
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup low-carb marinara sauce sugar-free
  • 1 teaspoon Italian seasoning
  • Salt & pepper to taste
  • For the Cheese Filling
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella
  • ½ cup grated parmesan
  • 1 large egg
  • 1 teaspoon garlic powder
  • 1 teaspoon parsley
  • For the “Noodle” Layer Choose 1
  • Pick whichever fits your preferred Keto Lasagna Recipe style:
  • Option 1: Zucchini Slices
  • 2 –3 zucchinis sliced lengthwise
  • Option 2: Egg Crepe Keto Noodles
  • 4 eggs
  • 4 oz cream cheese
  • Option 3: Deli Chicken “Noodle” Layers
  • Thin sliced deli chicken
  • Topping
  • Extra mozzarella
  • Fresh basil

Instructions
 

  • Make the Meat Sauce
  • Heat olive oil in a skillet.
  • Add onion and cook until softened.
  • Add garlic and sauté 30 seconds.
  • Add ground beef and cook until browned.
  • Stir in marinara, Italian seasoning, salt, and pepper.
  • Simmer for 5–7 minutes.
  • Prepare the Cheese Mixture
  • In a bowl, combine ricotta, mozzarella, parmesan, egg, garlic powder, and parsley.
  • Mix until smooth and creamy.
  • Prepare the Keto Lasagna Layers
  • Choose one:
  • Zucchini:
  • Slice zucchini lengthwise into thin strips.
  • Pat dry to remove moisture.
  • Egg Crepes:
  • Blend eggs and cream cheese until smooth.
  • Cook thin crepes in a nonstick skillet and cut into strips.
  • Deli Chicken:
  • Use thin deli chicken slices as the lasagna “pasta.”
  • Assemble the Lasagna
  • Preheat oven to 375°F (190°C).
  • Spread a thin layer of meat sauce at the bottom of a baking dish.
  • Add your chosen “noodle” layer.
  • Spread a layer of cheese mixture.
  • Repeat layers until ingredients are used.
  • Top with mozzarella.
  • Bake
  • Bake for 25–30 minutes or until bubbly and golden.
  • Let rest 10 minutes before slicing.
