  • For the Dough
  • 2 cups almond flour
  • 2 tablespoons coconut flour
  • 2 tablespoons melted butter
  • 2 tablespoons sugar-free sweetener
  • 2 teaspoons baking powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • For the Cinnamon Filling
  • ¼ cup butter softened
  • ¼ cup sugar-free brown sweetener
  • 1 tablespoon cinnamon
  • For the Cream Cheese Glaze
  • 2 oz cream cheese softened
  • 2 tablespoons heavy cream
  • 2 tablespoons powdered sweetener
  • ½ teaspoon vanilla extract
  • Optional Variations

  • Add a pinch of nutmeg

Instructions
 

  • Make the Dough
  • Preheat oven to 350°F (175°C).
  • Add almond flour, coconut flour, sweetener, baking powder, and salt to a bowl.
  • Stir in eggs, vanilla, and melted butter.
  • Mix until a soft dough forms.
  • Chill the dough for 10 minutes for easier rolling.
  • Roll Out the Dough
  • Place dough between two sheets of parchment paper.
  • Roll into a rectangle about ¼ inch thick.
  • Add the Cinnamon Filling
  • Mix softened butter, cinnamon, and sweetener.
  • Spread evenly over the dough surface.
  • Roll & Slice
  • Carefully roll the dough into a log using the parchment to guide you.
  • Slice into 8–10 rolls using a sharp knife.
  • Bake
  • Place rolls in a greased baking dish.
  • Bake for 18–22 minutes, until golden.
  • Add the Glaze
  • Whisk cream cheese, heavy cream, sweetener, and vanilla.
  • Drizzle over warm rolls and serve.
