Ingredients

  • 1 lb chicken breast cut into nugget-sized pieces
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • For the Breading
  • 1 cup almond flour
  • ½ cup grated parmesan cheese
  • 1 teaspoon paprika
  • ½ teaspoon Italian seasoning
  • Optional: pinch of cayenne for heat
  • For Dipping
  • Sugar-free ketchup
  • Ranch
  • Spicy mayo
  • Mustard
  • Optional Add-Ins
  • Crushed pork rinds for extra crunch
  • Hot sauce marinade
  • Coconut flour light dusting to help coating stick

Instructions
 

  • Prep the Chicken
  • Pat chicken dry and cut into evenly sized pieces.
  • Season with salt, pepper, garlic powder, and onion powder.
  • Toss well to coat.
  • Make the Breading
  • Combine almond flour, parmesan, paprika, and Italian seasoning in a bowl.
  • Mix until evenly blended.
  • Coat the Nuggets
  • Dip chicken pieces into the breading mixture.
  • Press gently so the coating sticks.
  • Arrange nuggets on a parchment-lined baking sheet or air fryer basket.
  • Bake or Air Fry
  • To Bake:
  • Preheat oven to 400°F (200°C).
  • Bake for 18–20 minutes, flipping halfway.
  • To Air Fry:
  • Air fry at 375°F (190°C) for 12–15 minutes, shaking once halfway.
  • Nuggets should be golden, crispy, and fully cooked.
  • Serve
  • Serve warm with your favorite dipping sauces for an easy, satisfying low-carb meal.
