For the Chicken Souvlaki: 1 ½ pounds boneless skinless chicken breasts (or thighs for more tenderness) 3 tablespoons olive oil 3 tablespoons lemon juice freshly squeezed 2 garlic cloves minced 1 tablespoon dried oregano 1 teaspoon ground cumin ½ teaspoon paprika Salt and black pepper to taste Wooden skewers soaked in water for 30 minutes, if grilling For the Tzatziki Sauce: 1 cup plain Greek yogurt full-fat or low-fat ½ cucumber grated (or finely diced) 1 tablespoon olive oil 1 tablespoon lemon juice 2 cloves garlic minced 1 tablespoon fresh dill or 1 teaspoon dried Salt and pepper to taste
