Ingredients
  

  • 1 pound boneless skinless chicken breast or thighs, cut into bite-sized pieces
  • 1/2 cup grated parmesan cheese
  • 1/2 cup breadcrumbs regular or panko for extra crunch
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon salt
  • 2 large eggs beaten
  • 1/2 cup all-purpose flour
  • 2 tablespoons olive oil for pan-frying
  • Optional garnish: Fresh parsley and extra parmesan cheese
  • Dipping sauce of choice: Ranch marinara, or garlic aioli

Instructions
 

  • Mix breadcrumbs, parmesan, garlic powder, paprika, salt, and pepper in a shallow dish.
  • Set up three bowls: one with flour, one with beaten eggs, and one with the breadcrumb mixture.
  • Coat chicken pieces in flour, egg, and then breadcrumbs.
  • Heat olive oil in a skillet and cook chicken bites for 3-4 minutes per side until golden and cooked through.
  • Remove and drain on paper towels. Garnish with parsley and extra parmesan.
  • Serve hot with your favorite dipping sauce.
