12 oz pasta rotini or bowtie works best 1 cup cherry tomatoes halved 1 cup cucumber diced 1/2 cup red bell pepper chopped 1/2 cup shredded carrots 1/3 cup red onion finely chopped 1 cup mozzarella cheese cubes or mini mozzarella balls 1/2 cup mayonnaise 1/4 cup sour cream 1 tbsp Dijon mustard 1 tbsp lemon juice 1 tsp garlic powder Salt and black pepper to taste Fresh parsley for garnish optional
Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
In a large bowl, combine pasta, tomatoes, cucumber, bell pepper, carrots, and red onion.
Add mozzarella cheese and toss gently.
In a small bowl, whisk together mayonnaise, sour cream, mustard, lemon juice, garlic powder, salt, and pepper.
Pour dressing over the salad and mix until well coated.
