Ingredients
  

  • 12 oz pasta rotini or bowtie works best
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/2 cup red bell pepper chopped
  • 1/2 cup shredded carrots
  • 1/3 cup red onion finely chopped
  • 1 cup mozzarella cheese cubes or mini mozzarella balls
  • 1/2 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1 tsp garlic powder
  • Salt and black pepper to taste
  • Fresh parsley for garnish optional

Instructions
 

  • Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  • In a large bowl, combine pasta, tomatoes, cucumber, bell pepper, carrots, and red onion.
  • Add mozzarella cheese and toss gently.
  • In a small bowl, whisk together mayonnaise, sour cream, mustard, lemon juice, garlic powder, salt, and pepper.
  • Pour dressing over the salad and mix until well coated.
  • Refrigerate for at least 30 minutes before serving.
  • Stir, garnish with parsley, and serve chilled.
