Ingredients
  

  • 1 cup rolled oats
  • 1/2 cup shredded carrots about 2 medium-sized carrots
  • 1/4 cup ground flaxseeds
  • 1/4 cup chopped walnuts or any nuts of your choice
  • 1/4 cup raisins optional
  • 1/4 teaspoon ground cinnamon
  • 1/4 teaspoon ground ginger
  • 1 tablespoon chia seeds optional
  • 1/4 cup honey or maple syrup
  • 1/2 teaspoon vanilla extract
  • Pinch of salt

Instructions
 

  • Prepare the Ingredients
  • Grate 2 medium-sized carrots to get about 1/2 cup of shredded carrots. Chop the walnuts into small pieces if using, and set all ingredients aside.
  • Combine Dry Ingredients
  • In a large mixing bowl, combine rolled oats, ground flaxseeds, cinnamon, ginger, and chia seeds (if using). Stir well.
  • Add Wet Ingredients
  • Add honey (or maple syrup), vanilla extract, and a pinch of salt to the dry mixture. Stir everything together until combined.
  • Mix in Carrots and Nuts
  • Add the shredded carrots and chopped walnuts (or your choice of nuts). Stir to mix evenly.
  • Roll the Bites
  • Use your hands to roll the mixture into small balls (about the size of a golf ball). If needed, wet your hands to make rolling easier.
  • Chill
  • Place the energy bites on a parchment-lined tray and refrigerate for at least 2 hours to firm up.
  • Serve
  • Once chilled, serve and enjoy your delicious Carrot Cake Energy Bites!
