Prepare the Ingredients
Grate 2 medium-sized carrots to get about 1/2 cup of shredded carrots. Chop the walnuts into small pieces if using, and set all ingredients aside.
Combine Dry Ingredients
In a large mixing bowl, combine rolled oats, ground flaxseeds, cinnamon, ginger, and chia seeds (if using). Stir well.
Add Wet Ingredients
Add honey (or maple syrup), vanilla extract, and a pinch of salt to the dry mixture. Stir everything together until combined.
Mix in Carrots and Nuts
Add the shredded carrots and chopped walnuts (or your choice of nuts). Stir to mix evenly.
Roll the Bites
Use your hands to roll the mixture into small balls (about the size of a golf ball). If needed, wet your hands to make rolling easier.
Chill
Place the energy bites on a parchment-lined tray and refrigerate for at least 2 hours to firm up.
