Ingredients
  

  • 4 cod fillets 6 oz each
  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 4 garlic cloves minced
  • 1 can 14 oz crushed tomatoes
  • 1 tbsp tomato paste
  • 1 tsp red chili flakes
  • 1 tsp smoked paprika
  • 1/2 tsp dried oregano
  • 1/2 tsp sugar optional
  • Salt and black pepper to taste
  • 1/2 cup chicken or vegetable broth
  • Fresh parsley or basil for garnish
  • Lemon wedges for serving

Instructions
 

  • Pat cod fillets dry and season with salt and pepper. Sear in a skillet with olive oil for 2-3 minutes per side. Remove and set aside.
  • Sauté onion in the same skillet until translucent. Add garlic and cook for 1 minute.
  • Stir in tomato paste, smoked paprika, and chili flakes. Add crushed tomatoes, broth, oregano, and sugar. Simmer for 5-7 minutes.
  • Return cod to the skillet, spoon sauce over fillets, and simmer for 6-8 minutes until cooked through.
  • Garnish with parsley or basil and serve with lemon wedges.
