Ingredients
  

For the Chicken:

  • 2 boneless skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Pasta:

  • 12 oz. penne or rotini pasta
  • Salt for pasta water

For the Caesar Dressing:

  • 1/2 cup mayonnaise
  • 1/4 cup Greek yogurt optional, for a lighter version
  • 2 tablespoons freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 1 garlic clove minced
  • 1/4 cup grated parmesan cheese
  • 1/4 cup anchovy paste or 2-3 anchovy fillets optional but recommended for authentic flavor
  • Salt and pepper to taste

Instructions
 

  • Prepare the chicken: Season and grill chicken breasts for 6-7 minutes per side, then slice thinly.
  • Cook the pasta: Boil pasta according to package instructions, reserve 1/2 cup pasta water, and drain.
  • Make the dressing: Whisk together mayo, Greek yogurt, lemon juice, Dijon mustard, garlic, parmesan, and anchovies.
  • Combine pasta and dressing: Toss the cooked pasta with the dressing, adding a little pasta water if needed.
  • Assemble: Top the pasta with grilled chicken, fresh parmesan, croutons, and parsley.
  • Serve: Enjoy immediately with extra dressing and lemon juice if desired.
