Ingredients
  

  • 3 cups cooked shredded chicken rotisserie chicken recommended
  • 2 cups cooked rice white or brown
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz diced tomatoes with green chilies
  • 1 cup sour cream
  • 1 cup enchilada sauce
  • 2 cups shredded cheese Mexican blend or cheddar
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Chopped fresh cilantro for garnish

Instructions
 

  • Preheat your oven to 375°F (190°C) and grease a 9x13-inch baking dish.
  • In a large bowl, mix shredded chicken, cooked rice, black beans, diced tomatoes, sour cream, enchilada sauce, chili powder, cumin, garlic powder, salt, and pepper. Stir until combined.
  • Spread half of the chicken mixture evenly in the prepared baking dish. Sprinkle 1 cup of shredded cheese over this layer.
  • Add the remaining chicken mixture and top with the remaining 1 cup of cheese.
  • Cover the dish with aluminum foil and bake for 20 minutes.
  • Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  • Let the casserole cool slightly, garnish with fresh cilantro, and serve with tortilla chips or warm flour tortillas.
