Cherry Amaretto Panna Cotta

- For the Panna Cotta:
- 2 cups heavy cream
- 1/2 cup whole milk
- 1/2 cup granulated sugar
- 2 tsp vanilla extract
- 2 tbsp amaretto liqueur
- 2 1/2 tsp powdered gelatin
- 3 tbsp cold water
- For the Cherry Glaze:
- 1 cup fresh or frozen cherries
- 1/4 cup granulated sugar
- 1 tbsp lemon juice
- 2 tbsp water
- 1 tsp cornstarch
Sprinkle gelatin over 3 tablespoons of cold water and let bloom for 5 minutes.
Heat cream, milk, and sugar in a saucepan until sugar dissolves. Remove from heat.
Add vanilla, amaretto, and gelatin. Whisk until smooth.
Pour into glasses/ramekins. Chill for 4 hours or overnight.
Cook cherries, sugar, lemon juice, and water in a saucepan. Thicken with cornstarch. Cool glaze.
Top panna cotta with cherry glaze, garnish with cherries and almonds, and serve chilled.
