Cherry Amaretto Panna Cotta

Ingredients
  

  • For the Panna Cotta:
  • 2 cups heavy cream
  • 1/2 cup whole milk
  • 1/2 cup granulated sugar
  • 2 tsp vanilla extract
  • 2 tbsp amaretto liqueur
  • 2 1/2 tsp powdered gelatin
  • 3 tbsp cold water
  • For the Cherry Glaze:
  • 1 cup fresh or frozen cherries
  • 1/4 cup granulated sugar
  • 1 tbsp lemon juice
  • 2 tbsp water
  • 1 tsp cornstarch

Instructions
 

  • Sprinkle gelatin over 3 tablespoons of cold water and let bloom for 5 minutes.
  • Heat cream, milk, and sugar in a saucepan until sugar dissolves. Remove from heat.
  • Add vanilla, amaretto, and gelatin. Whisk until smooth.
  • Pour into glasses/ramekins. Chill for 4 hours or overnight.
  • Cook cherries, sugar, lemon juice, and water in a saucepan. Thicken with cornstarch. Cool glaze.
  • Top panna cotta with cherry glaze, garnish with cherries and almonds, and serve chilled.
