Ingredients
  

  • 2 medium-sized chicken breasts boneless and skinless
  • 1 medium head of cauliflower or pre-made cauliflower rice, about 4 cups
  • 2 tablespoons sesame oil or olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup carrots diced or shredded
  • 1 cup peas frozen or fresh
  • 2 large eggs
  • 3 tablespoons soy sauce or coconut aminos for a gluten-free version
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame seeds optional
  • 2 green onions chopped for garnish
  • Salt and pepper to taste

Instructions
 

  • Prepare Cauliflower Rice: Chop cauliflower into florets and pulse in a food processor until rice-sized, or use pre-made cauliflower rice.
  • Cook Chicken: Heat 1 tablespoon sesame oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper, cook for 6-7 minutes per side, then remove and slice.
  • Sauté Vegetables: In the same skillet, add remaining oil. Sauté onion and garlic until fragrant, about 2-3 minutes. Add carrots and peas, cook for 4-5 minutes.
  • Scramble Eggs: Push veggies to the side. Scramble eggs in the empty side of the skillet until fully cooked.
  • Add Cauliflower Rice: Stir in cauliflower rice, cook for 5-7 minutes until tender, stirring occasionally.
  • Add Seasoning: Drizzle soy sauce and rice vinegar over the rice mixture. Stir to combine and adjust seasoning with salt and pepper.
  • Combine Chicken: Add sliced chicken back into the skillet, stirring everything together.
  • Garnish and Serve: Top with sesame seeds and chopped green onions. Serve and enjoy!
