Ingredients
  

For the Chicken:

  • 2 large chicken breasts
  • 2 tablespoons Cajun seasoning store-bought or homemade
  • 1 tablespoon olive oil
  • 1 tablespoon unsalted butter

For the Pasta:

  • 8 ounces fettuccine or penne pasta
  • 1 tablespoon olive oil to prevent sticking

For the Sauce:

  • 1 tablespoon unsalted butter
  • 1 medium onion finely chopped
  • 1 red bell pepper thinly sliced
  • 1 yellow bell pepper thinly sliced
  • 3 garlic cloves minced
  • cups heavy cream
  • ½ cup chicken broth
  • ½ cup grated parmesan cheese
  • 1 teaspoon Cajun seasoning adjust to taste
  • Salt and black pepper to taste

For Garnish:

  • Chopped fresh parsley
  • Grated parmesan cheese

Instructions
 

  • Cook pasta according to package instructions; drain and set aside.
  • Season chicken with Cajun seasoning and cook in a skillet until golden and fully cooked. Remove and slice.
  • Sauté onions, bell peppers, and garlic in butter until softened.
  • Add heavy cream, chicken broth, parmesan cheese, and Cajun seasoning to the skillet. Stir until smooth.
  • Toss cooked pasta in the sauce, top with sliced chicken, and mix well.
  • Garnish with parsley and parmesan; serve immediately.
