For the Chicken: 2 large chicken breasts 2 tablespoons Cajun seasoning store-bought or homemade 1 tablespoon olive oil 1 tablespoon unsalted butter For the Pasta: 8 ounces fettuccine or penne pasta 1 tablespoon olive oil to prevent sticking For the Sauce: 1 tablespoon unsalted butter 1 medium onion finely chopped 1 red bell pepper thinly sliced 1 yellow bell pepper thinly sliced 3 garlic cloves minced 1½ cups heavy cream ½ cup chicken broth ½ cup grated parmesan cheese 1 teaspoon Cajun seasoning adjust to taste Salt and black pepper to taste For Garnish: Chopped fresh parsley Grated parmesan cheese
Cook pasta according to package instructions; drain and set aside.
Season chicken with Cajun seasoning and cook in a skillet until golden and fully cooked. Remove and slice.
Sauté onions, bell peppers, and garlic in butter until softened.
Add heavy cream, chicken broth, parmesan cheese, and Cajun seasoning to the skillet. Stir until smooth.
Toss cooked pasta in the sauce, top with sliced chicken, and mix well.
Garnish with parsley and parmesan; serve immediately.
