Make the Buffalo Chicken Filling
In a pan, melt butter over medium heat.
Add shredded chicken, buffalo sauce, ranch dressing, garlic powder, paprika, salt, and pepper.
Stir until everything is evenly coated and heated through.
Reduce heat and let the mixture thicken slightly so it doesn’t make the quesadilla soggy.
Assemble the Quesadilla
Heat a pan over medium heat and add a little oil or butter.
Place one tortilla in the pan.
Sprinkle cheese over half the tortilla.
Add a generous layer of buffalo chicken filling.
Sprinkle more cheese on top—this helps seal it shut.
Fold the tortilla in half.
Cook Until Crispy
Cook for 2–3 minutes on each side, pressing down gently with a spatula.
Tortilla should be golden brown and cheese fully melted.
Repeat with remaining tortillas.
Slice & Serve
Cut into triangles and serve with ranch dressing, celery sticks, or extra buffalo sauce.
