Ingredients
  

  • For the Parmesan Crust:
  • 4 cod fillets 6 oz each
  • 1 cup grated Parmesan cheese
  • 1/2 cup panko breadcrumbs
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • For the Garlic Butter:
  • 4 tbsp unsalted butter melted
  • 3 cloves garlic minced
  • 1 tbsp fresh lemon juice
  • 1 tbsp fresh parsley chopped

Instructions
 

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper or grease it lightly.
  • In a bowl, mix Parmesan cheese, panko breadcrumbs, garlic powder, paprika, salt, and pepper. Add olive oil and combine until the mixture resembles wet sand.
  • Pat cod fillets dry with a paper towel and place them on the prepared baking sheet.
  • Press the Parmesan mixture onto each fillet, coating them evenly.
  • Bake for 12-15 minutes, or until the crust is golden brown and the cod flakes easily with a fork.
  • While the cod is baking, melt butter in a small saucepan over low heat. Add minced garlic and cook for 1-2 minutes until fragrant. Remove from heat and stir in lemon juice and parsley.
  • Drizzle garlic butter over the baked cod fillets and serve with lemon wedges. Enjoy!
